Poor airflow in my restaurant's kitchen

I have been a line cook at a restaurant for a few months now.

It is a high stress job that requires quick and skilled and decisive action.

I’ve always enjoyed cooking and I have quite a lot of skill in the kitchen so that’s not the difficult part. The job is harder because of the constant stream of orders that need to be filled and our waiters aren’t always on the ball when it comes to getting them right. The problems mostly come in the mix ups and the confusion, but I can deal with that pretty well on most days. The one thing that has been frustrating me the most is the very uncomfortable working conditions within the kitchen. We seem to have very poor air flow in the kitchen and an air conditioning system that seems to be on its way out. I’ve asked my boss what’s going on with the HVAC system because of how hot and stuffy it feels in the kitchen but he blames it on how hot the stoves and friars make everything. I know that it’s more than that. At this point, I almost want to call out an HVAC technician myself and pay for the visit! I wouldn’t mind doing so if it meant that I could work in much more comfortable conditions. I’m beginning to think that our boss doesn’t care about the airflow and high temperature issues in the kitchen because he’s trying to save a buck, but we aren’t going to stand for it much longer.
