Poor airflow in our bar's kitchen

I have been a line cook at a restaurant for a few months now! It is a high stress job that requires quick and skilled and decisive action.

I have constantly enjoyed cooking and I have quite a lot of skill in the kitchen so that is not the hard part, however the job is harder because of the constant stream of orders that need to be filled and our waitresses aren’t constantly on the ball when it comes to getting them right.

The problems mostly come in the mix ups and the confusion, but I can deal with that pretty well on most days. The one thing that has been aggravating myself and others the most is the absolutely uncomfortable working conditions within the kitchen! We seem to have absolutely exhausting air flow in the kitchen and an air conditioning that seems to be on its way out. I have asked our boss what has going on with the Heating, Ventilation, and A/C system because of how sizzling and stuffy it feels in the kitchen however he blames it on how sizzling the stoves and friars make everything. I assume that it’s more than that, at this point, I almost want to call out an Heating, Ventilation, and A/C specialist myself and pay for the visit! I wouldn’t mind doing so if it meant that I could work in much more comfortable conditions. I am start to recognize that our boss does not love the airflow and high temperature problems in the kitchen because he’s trying to save a buck, but both of us aren’t going to stand for it much longer.
